Behind every batch of Santiago Cocoa is a qualified nutrition professional. Patrycja brings 18 accredited certifications in gut health, microbiota, clinical dietetics and macronutrient science — helping us understand, verify and honestly communicate the nutritional value of our Dominican cacao.

Real nutrition expertise behind our cacao
Santiago Cocoa is a family business built on three generations of Dominican cacao. But great beans are only part of the story. As a food and ingredient supplier for chocolate makers, bakeries, and health-focused brands, we believe our clients deserve more than a commodity — they deserve a partner who genuinely understands nutrition.
That’s why we work with Patrycja Ławrynowicz, our in-house nutritionist. Her continuing education spans human microbiota and gut health, clinical and laboratory diagnostics, macronutrient science, and evidence-based dietotherapy — completed through respected institutions across Europe.
Her role is simple but important: to help us evaluate the nutritional profile of our cacao honestly, answer the questions our health-conscious buyers ask, and make sure the way we describe our products is grounded in science — never hype.
